Phony Guacamole (Avocado Zucchini Guacamole)
This guacamole is half zucchini so it is much lighter than the usual kind.
Main Ingredient: Avocado
Low Fat Low Cholesterol
1 medium avocado
1 medium zucchini
2 tablespoons of cilantro, finely -chopped
Lime juice, freshly squeezed from half of a lime
1/2 teaspoon garlic powder
1 small tomato, chopped (optional)
1/4 cup of onion, finely diced (optional)
Salt to taste

Directions Preparing: 5 min
Step 1Dice zucchini, place into a microwave-safe bowl, and microwave on high for 5 minutes.
Step 2Remove zucchini from microwave and wrap in cheese cloth and squeeze to remove as much moisture as possible. (A paper towel or clean dish towel can be used instead.) Be careful! zucchini will be hot. Allow it to cool.
Step 3Mash avocado with a fork (see Chef’s Notes).
Step 4Add the cilantro, lime juice, garlic powder, and salt to taste.
Step 5Add zucchini and, if using, tomatoes and onion. Stir to combine.
Step 6Serve with tortilla chips or use as a garnish on tacos, fajitas, or salad.
